This recipe will make about 28 baby shower cakes
Ingredients
8 oz cornstarch
4 oz (½ cup) superfine sugar
6 oz (1½ sticks) butter
2 eggs
1 teaspoonful baking powder
1 tablespoonful milk
frac12; teaspoonful vanilla extract
Pink food coloring
Blue food coloring

A muffin pan lined with paper baking cups (paper cupcake liners).
Cooking Instructions
The butter for these little baby cakes needs to be soft, so you may need to take it out of the refrigerator several hours before baking. The eggs too should, ideally, be at room temperature.
Begin by putting the butter and sugar into a large bowl, then cream beat) together until the mixture is light and fluffy. Next, beating well after each addition, add the eggs one at a time. Then add the milk and the cornstarch and beat for a further five to ten minutes. Now add the baking powder and the vanilla extract and mix well.
After this put half of the mixture into another bowl. To one bowl add enough pink food coloring to make the mixture look a definite pink, and mix. And to the second bowl add enough blue food coloring to make the mixture look a definite blue, and mix.
Then put one generous teaspoonful of the pink baby cake mixture into 14 paper baking cups and one generous teaspoonful of the blue mixture into another 14 paper baking cups.
Now lightly sprinkle the cakes with superfine sugar. And bake for about 15 to 20 minutes at 375°F.
If you know whether the baby is a boy or is a girl then you can, of course, make all the baby cakes blue or all the baby cakes pink.
